Favorite Foods Fridays #1

On every Friday I am going to post a recipe of my favorite foods. Most will be healthy but some are just to “mmmmm…. so good” not to post.

Today is an “un-healthy” food that we only make on special occasions, like Christmas & Thanksgiving. If I had it my way I’d eat it everyday but I’d be back up to 300lbs and I promised myself and my family that I would never go there again.

My mom shared this recipe with me a few years ago and I was HOOKED. We make this instead of Pumpkin Pie.

PUMPKIN PIE CAKE

1 – 29 oz. can pumpkin puree
1 – 12 fluid oz. can evaporated milk
3 eggs
1 cup white sugar
1/2 tsp. salt
4 teaspoons pumpkin pie spice
1 – ( 18.25 oz.) package yellow cake mix
3/4 cup butter

Preheat oven to 350°F.

Lightly grease one 9×13 inch pan.

In a large bowl, combine pumpkin, evaporated milk, eggs, sugar, salt, and pumpkin pie spice. Mix well. Pour batter into the prepared pan.

Sprinkle the dry cake mix evenly over the pumpkin mixture. Melt the butter or margarine, and drizzle it over the cake mix.

Bake for 55 to 60 minutes, or until done.
