This is a simple fun for summer days treat.

Healthy Ice-cream Cookies

Buy some kind of chocolate cookie/crackers, we use Simple Pleasures Chocolate Thins. Take two cookies and spread one side with peanut-butter, (about a spoon full) and add about a spoon full of whipped cream on top of that, we use low fat. Place the other half of the cookie on and freeze for a few hours. Then EAT!!! MMMMMMMMM SO GOOD.
