Sorry I haven’t updated this in awhile. When I’m on vacation it’s hard to update FFF. But while I was away I get to try a new recipe made by my mother-in-law. Even my 1 year old LOVED it.
Meat & Corn Bread Squares
1 lb. Ground beef
1 T. corn starch
1 T. dried, minced onion
1-2 t. chilli powder
½ t. garlic salt
1 – 16 oz. Can tomatoes, cut up & drained or salsa (or half and half)
1 – 4 oz. Can diced green chilli peppers, drained
Taco or Cajun seasoning to taste
¾ c. flour
¾ c. corn meal
2 t. baking powder
2 beaten eggs
1 – 8 ¾ oz. Can cream-style corn
½ c. milk
3 T. cooking oil
1 c. shredded cheese
Brown meat. Drain fat. Stir in next 6 ingredients. Cook and stir till thickened and bubbly. Combine dry ingredients. Combine wet ingredients in separate bowl and thin stir into dry ingredients. Add cheese. Stir just until moistened.
Spread ½ batter into greased 9” x 9” baking pan. Spoon meat mixture on top. Top with remaining batter.
Bake at 375 degrees F. for about 30 min. or till golden brown.
Let stand 5 min. Cut into squares.
Option: Serve with salsa.
